Born in 1982, Stefano Mattara is an Italian chef with extensive experience in the world of fine dining. His cuisine is born from the intersection of regional tradition and contemporary technique, defined by an unwavering focus on seasonality and the absolute quality of raw materials.
After graduating from the Arona Hotel Management School, he embarked on an international training path that led him to the Grand Hotel Grindelwald in Switzerland, broadening his gastronomic vision within elite hospitality contexts. Throughout his career, he has collaborated with leading figures of Italian cuisine—including Andrea Berton, Matteo Torretta, Gualtiero Marchesi, and Carlo Cracco—experiences that helped define his rigorous and elegant style.
Following various high-profile roles across the Lombardy region, he took the helm at Sottovoce in Como. There, he solidified his culinary identity through a Mediterranean-inspired menu that highlighted local produce and freshwater fish from Lake Como.
